Mushroom and Spinach Frittata

Ingredients

  • 10 large eggs
  • 8 oz cremini mushrooms
  • 3 cups baby spinach
  • 1/2 onion
  • 1/2 cup grated parmesan
  • 1/4 cup whole milk
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Heat the oven to 375F and whisk the eggs with the milk, parmesan, salt, and pepper.
  2. Warm the olive oil in an oven-safe skillet over medium and cook the onion and sliced mushrooms until browned and dry, about 8 minutes.
  3. Add the garlic and spinach and cook until the spinach wilts, about 2 minutes.
  4. Pour in the egg mixture and stir gently for 30 seconds, then let it settle.
  5. Transfer the skillet to the oven and bake until puffed and just set in the center, about 14 minutes.
  6. Cool briefly, then slice into wedges and serve.
