Shrimp Risotto

Ingredients

  • 2 cups arborio rice
  • 1 lb large shrimp
  • 6 cups seafood broth
  • 1 onion
  • 3 garlic cloves
  • 3 tbsp butter
  • 1/2 cup grated parmesan
  • 2 tbsp olive oil
  • 1 lemon
  • 1/4 cup chopped parsley
  • 1/2 tsp salt

How to cook it

  1. Warm the seafood broth in a saucepan and keep it at a bare simmer.
  2. Heat the olive oil in a wide pot and sear the peeled shrimp for 1 minute per side, then remove and set aside.
  3. Melt 1 tbsp butter in the pot and soften the onion and garlic, about 4 minutes.
  4. Add the arborio rice and stir until the edges turn translucent, about 2 minutes.
  5. Add the warm broth one ladle at a time, stirring until each addition is absorbed, until the rice is creamy and tender, about 20 minutes.
  6. Stir in the remaining butter, parmesan, lemon juice, and the shrimp to warm through.
  7. Season with salt, sprinkle with parsley, and serve.
