Ingredients

  • 1.5 lb large shrimp, peeled
  • 3 bell peppers
  • 2 large onions
  • 8 large flour tortillas
  • 2 limes
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 3 garlic cloves
  • 3 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Toss the shrimp with the chili powder, cumin, minced garlic, the juice of one lime, and salt.
  2. Heat 2 tbsp olive oil in a skillet over high heat and cook the sliced peppers and onions until charred and tender, about 8 minutes, then remove.
  3. Add the remaining oil and cook the shrimp until pink and just opaque, about 2 minutes per side.
  4. Return the peppers and onions to the pan and toss with the shrimp for 1 minute.
  5. Warm the flour tortillas until soft and pliable.
  6. Serve the shrimp and peppers with the tortillas and remaining lime wedges.
