Shrimp and Grits

Ingredients

  • 1.5 lb large shrimp
  • 1 cup stone-ground grits
  • 1 cup whole milk
  • 1 cup sharp cheddar
  • 3 tbsp butter
  • 4 slices bacon
  • 3 garlic cloves
  • 1 cup chicken broth
  • 3 green onions
  • 1 lemon
  • 1 tbsp Cajun seasoning
  • 1/2 tsp salt

How to cook it

  1. Bring 3 cups water and the milk to a boil, whisk in the grits, and simmer, stirring often, until thick and creamy, about 20 minutes.
  2. Stir the cheddar and 1 tbsp butter into the grits and keep warm.
  3. Cook the chopped bacon in a skillet until crisp, then remove, leaving the drippings.
  4. Toss the shrimp with the Cajun seasoning and cook in the bacon drippings with the garlic until pink, about 4 minutes.
  5. Add the broth, remaining butter, and a squeeze of lemon and simmer into a light sauce.
  6. Spoon the shrimp over the grits and top with the bacon and sliced green onions.
