Ingredients

  • 6 portobello mushrooms
  • 3 bell peppers
  • 2 large onions
  • 8 large flour tortillas
  • 2 limes
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 3 garlic cloves
  • 3 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Slice the portobellos, bell peppers, and onions into thick strips.
  2. Toss the vegetables with the minced garlic, chili powder, cumin, and salt.
  3. Heat the olive oil in a large cast-iron skillet over high heat.
  4. Cook the vegetables, stirring occasionally, until charred at the edges and the mushrooms release their juices, about 10 minutes.
  5. Brighten with a squeeze of lime just before serving.
  6. Warm the flour tortillas and serve alongside for building fajitas.
