Penne Arrabbiata
Penne Arrabbiata is Italian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1 lb penne
- 28 oz crushed tomatoes
- 5 garlic cloves
- 1.5 tsp red pepper flakes
- 1/4 cup olive oil
- 1/4 cup chopped parsley
- 1/2 tsp salt
How to cook it
- Bring a large pot of salted water to a boil and cook the penne until al dente.
- Meanwhile heat the olive oil in a skillet over medium and cook the sliced garlic and red pepper flakes until fragrant and just golden, about 2 minutes.
- Pour in the crushed tomatoes, season with salt, and simmer until thickened, about 12 minutes.
- Reserve a cup of pasta water before draining the penne.
- Toss the pasta with the spicy sauce, loosening with pasta water as needed.
- Stir in the parsley and serve.
