Ingredients

  • 1 cup ditalini pasta
  • 15 oz cannellini beans
  • 15 oz kidney beans
  • 15 oz crushed tomatoes
  • 1 carrot
  • 2 celery stalks
  • 1 onion
  • 3 garlic cloves
  • 5 cups vegetable broth
  • 3 tbsp olive oil
  • 1 tbsp fresh rosemary
  • 1/4 cup chopped parsley
  • 3/4 tsp salt

How to cook it

  1. Heat the olive oil in a large pot and soften the carrot, celery, onion, and garlic, about 6 minutes.
  2. Stir in the rosemary, then add the crushed tomatoes and vegetable broth and bring to a simmer.
  3. Add the drained beans and simmer 15 minutes, mashing some against the pot to thicken.
  4. Stir in the ditalini and cook until tender, about 9 minutes, adding water if the soup gets too thick.
  5. Season with salt and stir in the parsley.
  6. Serve warm with a drizzle of olive oil.
