Ingredients
- 3 potatoes, boiled and mashed
- 1/4 cup red onion, finely chopped
- 1 green chili, finely chopped
- 2 tbsp mustard oil
- 1/4 tsp panch phoron (five-spice blend)
- 2 tbsp chopped cilantro
- 3/4 tsp salt
How to cook it
- Boil the potatoes until fork-tender, then peel and mash them roughly while still warm.
- Heat the mustard oil in a small pan and temper with the panch phoron until it crackles, then let it cool slightly.
- Mix the tempered oil into the mashed potato along with the raw onion, green chili, salt, and cilantro.
- Stir everything together until well combined but still a little chunky.
- Serve at room temperature alongside dal and rice, or with pakhala on a hot day.
