Chorchori (Bengali Mixed Vegetable Medley)

Ingredients
- 1 potato, cubed
- 1/2 cup eggplant, cubed
- 1/2 cup pumpkin, cubed
- 1/2 cup ridge gourd, cubed
- 2 green chilies, slit
- 3 tbsp mustard oil
- 1 tsp panch phoron (five-spice blend)
- 1/2 tsp turmeric
- 1 tsp salt
How to cook it
- Heat the mustard oil in a wide, heavy pan and temper with the panch phoron until it crackles and smells fragrant.
- Add the potato and pumpkin first, since they take longest, and fry for 5 minutes.
- Add the eggplant, ridge gourd, turmeric, salt, and slit green chilies, and stir everything together.
- Cover and cook on low heat, stirring occasionally, until all the vegetables are soft and lightly mashed together, about 20 minutes, without adding much water so it stays thick and dry.
- Serve warm alongside dal and rice, using whatever vegetables are in the kitchen that week.
