Ingredients

  • 1 lb baby potatoes
  • 3 tbsp mustard oil
  • 1 tsp cumin seeds
  • 1 tbsp grated ginger
  • 1 cup tomato puree
  • 1/2 cup plain yogurt, whisked
  • 1/2 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1 tsp salt
  • 1.5 cups water
  • 2 tbsp chopped cilantro

How to cook it

  1. Boil or steam the baby potatoes until just tender, then peel and prick them a few times with a fork.
  2. Heat the mustard oil in a pan and shallow fry the potatoes until golden on all sides, then set aside.
  3. In the same pan, temper the cumin seeds, then add the ginger paste and cook for a minute; no onion or garlic goes into this Bihari style.
  4. Stir in the turmeric, chili powder, coriander, and tomato puree, and cook until the oil separates.
  5. Lower the heat and whisk in the yogurt a little at a time so it doesn't split.
  6. Add the fried potatoes, salt, and water, and simmer uncovered until the gravy thickens and clings to the potatoes, about 12 minutes.
  7. Sprinkle with garam masala and cilantro and serve hot with rice or roti.
