Ingredients

  • 4 potatoes, cubed
  • 3 tbsp poppy seeds, soaked
  • 2 green chilies
  • 3 tbsp mustard oil
  • 1/2 tsp nigella seeds
  • 1/2 tsp turmeric
  • 1/2 cup water
  • 1 tsp salt

How to cook it

  1. Soak the poppy seeds in warm water for 20 minutes, then grind them with the green chilies into a smooth paste.
  2. Heat the mustard oil in a pan until it shimmers and temper with the nigella seeds.
  3. Add the potatoes and turmeric and fry for 5 minutes, stirring often, until the edges start to color.
  4. Stir in the poppy seed paste and salt, coating the potatoes well, then add the water, cover, and cook on low heat until the potatoes are tender, about 15 minutes.
  5. Uncover and let any extra liquid dry off so the posto clings to the potatoes, then serve warm with rice and a splash of raw mustard oil on top.
