Naga Smoked Pork with Bamboo Shoot
Naga Smoked Pork with Bamboo Shoot is Northeast Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 lb smoked pork
- 1/2 cup dried bamboo shoot
- 1 tbsp ginger, sliced
- 3 garlic cloves
- 2 green chili
- 2 cups water
- 1/2 tsp salt
How to cook it
- Soak the dried bamboo shoot in warm water for 20 minutes, then drain.
- Cut the smoked pork into small pieces and rinse briefly.
- Place the pork, bamboo shoot, ginger, garlic, and slit green chilies in a pot with the water.
- Bring to a boil, then cover and simmer over low heat until the pork is tender and the flavors meld, about 35 minutes.
- Taste before adding salt, since smoked pork and bamboo shoot are both already salty and pungent.
- Serve hot with plain rice; this is the everyday Naga protein, simmered rather than fried in oil.
Serve it with
