Ingredients

  • 1.5 lb smoked pork
  • 1/2 cup dried bamboo shoot
  • 1 tbsp ginger, sliced
  • 3 garlic cloves
  • 2 green chili
  • 2 cups water
  • 1/2 tsp salt

How to cook it

  1. Soak the dried bamboo shoot in warm water for 20 minutes, then drain.
  2. Cut the smoked pork into small pieces and rinse briefly.
  3. Place the pork, bamboo shoot, ginger, garlic, and slit green chilies in a pot with the water.
  4. Bring to a boil, then cover and simmer over low heat until the pork is tender and the flavors meld, about 35 minutes.
  5. Taste before adding salt, since smoked pork and bamboo shoot are both already salty and pungent.
  6. Serve hot with plain rice; this is the everyday Naga protein, simmered rather than fried in oil.
