Minestrone Soup

Ingredients
- 15 oz cannellini beans
- 15 oz kidney beans
- 1 cup ditalini pasta
- 28 oz crushed tomatoes
- 2 carrots
- 2 celery stalks
- 1 onion
- 1 zucchini
- 1 cup green beans
- 4 garlic cloves
- 6 cups vegetable broth
- 3 tbsp olive oil
- 3 cups baby spinach
- 1/4 cup chopped basil
- 1 tsp salt
How to cook it
- Heat the olive oil in a large pot and soften the carrots, celery, onion, and garlic, about 6 minutes.
- Stir in the crushed tomatoes and vegetable broth and bring to a simmer.
- Add the drained beans, zucchini, and green beans and simmer until the vegetables are tender, about 15 minutes.
- Stir in the ditalini and cook until al dente, about 9 minutes.
- Add the spinach and cook until wilted, about 2 minutes.
- Season with salt, stir in the basil, and serve.
