Ingredients
- 12 oz sweet potato glass noodles
- 1/4 cup tamari
- 3 tbsp sesame oil
- 4 cups baby spinach
- 2 carrots
- 1 onion
- 6 oz shiitake mushrooms
- 1 bell pepper
- 3 garlic cloves
- 2 tbsp sugar
- 3 scallions
- 1 tbsp sesame seeds
- 2 tbsp neutral oil
How to cook it
- Boil the glass noodles until tender and translucent, about 7 minutes, then drain and cut into shorter lengths.
- Stir the tamari, sesame oil, sugar, and garlic into a sauce.
- Heat the neutral oil in a large skillet and stir-fry the onion, carrots, mushrooms, and bell pepper until crisp-tender, about 5 minutes.
- Add the spinach and cook just until wilted, about 1 minute.
- Add the noodles and sauce and toss until everything is glossy and evenly coated, about 3 minutes.
- Fold in the scallions and sesame seeds and serve warm or at room temperature.
