Ingredients
- 4 cups cooked white rice
- 4 cups baby spinach
- 2 carrots
- 1 zucchini
- 8 oz cremini mushrooms
- 2 cups bean sprouts
- 4 large eggs
- 3 tbsp gochujang
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 3 garlic cloves
- 1 tbsp toasted sesame seeds
- 2 tbsp neutral oil
How to cook it
- Stir the gochujang with 1 tbsp sesame oil, the soy sauce, and a splash of water into a spoonable sauce.
- Sear the julienned carrots, sliced zucchini, and mushrooms separately in a little neutral oil so each keeps its own flavor, seasoning lightly.
- Wilt the spinach and blanch the bean sprouts, then toss each with a little sesame oil and garlic.
- Fry the eggs to keep the yolks runny.
- Divide the rice among four bowls and arrange the vegetables in sections on top.
- Add a fried egg to each bowl, drizzle with the gochujang sauce, and finish with sesame seeds.
