Korean Braised Tofu

Korean Braised Tofu is Korean home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

Ingredients

  • 28 oz firm tofu
  • 1/4 cup soy sauce
  • 2 tbsp gochugaru
  • 4 garlic cloves
  • 1 tsp grated ginger
  • 4 scallions
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp sesame seeds
  • 2 tbsp neutral oil
  • 4 cups cooked white rice

How to cook it

  1. Slice the tofu into thick planks and pat dry.
  2. Heat the neutral oil in a large skillet and pan-fry the tofu until golden on both sides, about 4 minutes per side.
  3. Stir the soy sauce, gochugaru, garlic, ginger, sugar, half the scallions, and 1/2 cup water into a braising sauce.
  4. Pour the sauce around the tofu and simmer, spooning it over, until the sauce reduces and coats the tofu, about 6 minutes.
  5. Drizzle with sesame oil and sprinkle with sesame seeds and the remaining scallions.
  6. Serve over warm rice.

Korean Braised Tofu takes about 25 minutes from a cold stove to the table, and the cooking itself is easy going. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
