Kimchi Stew with Pork

Ingredients
- 1 lb pork shoulder
- 3 cups aged napa cabbage kimchi
- 2 tbsp gochugaru
- 1 tbsp gochujang
- 1 tbsp soy sauce
- 4 garlic cloves
- 1 onion
- 14 oz firm tofu
- 4 scallions
- 1 tbsp sesame oil
- 4 cups water
How to cook it
- Heat the sesame oil in a pot and brown the sliced pork, about 5 minutes.
- Add the chopped kimchi, gochugaru, gochujang, and garlic and stir-fry until deeply fragrant, about 4 minutes.
- Pour in the water and soy sauce and bring to a boil, then add the onion.
- Simmer until the pork is tender and the broth turns rich and red, about 20 minutes.
- Add the cubed tofu and warm through, about 4 minutes.
- Scatter with scallions and serve with rice.
