Kimchi Stew with Pork

Ingredients

  • 1 lb pork shoulder
  • 3 cups aged napa cabbage kimchi
  • 2 tbsp gochugaru
  • 1 tbsp gochujang
  • 1 tbsp soy sauce
  • 4 garlic cloves
  • 1 onion
  • 14 oz firm tofu
  • 4 scallions
  • 1 tbsp sesame oil
  • 4 cups water

How to cook it

  1. Heat the sesame oil in a pot and brown the sliced pork, about 5 minutes.
  2. Add the chopped kimchi, gochugaru, gochujang, and garlic and stir-fry until deeply fragrant, about 4 minutes.
  3. Pour in the water and soy sauce and bring to a boil, then add the onion.
  4. Simmer until the pork is tender and the broth turns rich and red, about 20 minutes.
  5. Add the cubed tofu and warm through, about 4 minutes.
  6. Scatter with scallions and serve with rice.
