Ingredients

  • 4 cups cooked day-old rice
  • 1.5 cups vegan kimchi
  • 4 large eggs
  • 4 scallions
  • 3 garlic cloves
  • 1 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp neutral oil
  • 1 tbsp toasted sesame seeds

How to cook it

  1. Heat the neutral oil in a large skillet over medium-high and cook the garlic and chopped kimchi until sizzling, about 3 minutes.
  2. Stir in the gochujang and soy sauce and cook 1 minute more.
  3. Add the rice, breaking up any clumps, and stir-fry until hot and slightly crisp, about 4 minutes.
  4. Drizzle with the sesame oil, toss, then push to one side and fry the eggs in the empty space to your liking.
  5. Divide the rice among bowls and top each with a fried egg.
  6. Scatter scallions and toasted sesame seeds over the top and serve.
