Broiler (East German Roast Chicken)

Ingredients
- 3.5 lb whole chicken
- 3 tbsp vegetable oil
- 1 tbsp sweet paprika
- 1 tsp caraway seeds
- 3 garlic cloves, minced
- 1 lemon, halved
- 1.5 tsp salt
- 1/2 tsp black pepper
How to cook it
- Preheat the oven to 425 F. Pat the chicken dry, then use kitchen shears to cut out the backbone and press down firmly on the breastbone to flatten the chicken so it cooks evenly and quickly.
- Mix the oil, paprika, caraway, garlic, salt, and pepper into a paste and rub it all over the chicken, including under the breast skin.
- Squeeze the lemon halves over the chicken and set them under the bird on the baking sheet.
- Roast the chicken flat on a baking sheet for 40 to 45 minutes, until the skin is deeply golden and a thermometer in the thickest part of the thigh reads 165 F.
- Let the chicken rest for 10 minutes before carving and serving hot.
