Ingredients

  • 4 plaice or sole fillets
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup dry breadcrumbs
  • 4 tbsp vegetable oil
  • 1 lemon, cut into wedges
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Season the fish fillets with the salt and pepper on both sides.
  2. Set up three shallow dishes: the flour in one, the beaten eggs in the second, and the breadcrumbs in the third.
  3. Dredge each fillet in the flour, shaking off the excess, dip it in the egg, then coat it thoroughly in the breadcrumbs.
  4. Heat the oil in a large skillet over medium-high heat and fry the fillets for 2 to 3 minutes per side, until golden brown and cooked through.
  5. Drain briefly on paper towels and scatter the parsley over the top.
  6. Serve immediately with the lemon wedges.
