Kartoffelknoedel (Potato Dumplings)

Ingredients
- 2.5 lb russet potatoes, peeled and cut into chunks
- 1/2 cup potato starch
- 1/4 tsp ground nutmeg
- 1.5 tsp salt
- 2 tbsp butter
- 2 tbsp fresh chives, chopped
How to cook it
- Boil the potatoes in salted water until very tender, about 20 minutes, then drain well and let them steam-dry for a few minutes.
- Rice or mash the potatoes until completely smooth, then let the mash cool until just warm.
- Work in the potato starch, nutmeg, and salt until the mixture forms a soft, cohesive dough.
- Shape the dough into 8 to 10 round dumplings with damp hands.
- Lower the dumplings into a large pot of gently simmering, not boiling, salted water and cook for 15 to 18 minutes, until they float and firm up.
- Lift the dumplings out with a slotted spoon, drizzle with the melted butter, and scatter the chives over the top before serving alongside a roast or stew.
