Ingredients
- 1.5 lb boneless chicken breasts or thighs
- 4 cups chicken broth
- 2 carrots, sliced
- 8 oz button mushrooms, sliced
- 1 cup frozen peas
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 egg yolks
- 1/2 cup heavy cream
- 2 tbsp lemon juice
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Bring the chicken broth to a simmer in a wide pot, add the chicken, and poach for 15 to 18 minutes, until cooked through, then lift it out, let it cool slightly, and cube it, reserving the broth.
- Add the carrots to the reserved broth and simmer for 8 minutes, then add the mushrooms and peas and simmer for 4 minutes more, until all the vegetables are tender; lift the vegetables out with a slotted spoon and set them aside with the chicken.
- Melt the butter in a saucepan, whisk in the flour, and cook for 1 minute, then gradually whisk in 2 cups of the reserved broth and simmer, stirring, until smooth and thickened, about 5 minutes.
- Whisk the egg yolks with the cream in a small bowl, then whisk a ladle of the hot sauce into the yolks to temper them, and stir this back into the saucepan off the heat.
- Stir the chicken and vegetables into the sauce, add the lemon juice, salt, and pepper, and warm gently over low heat without letting it boil.
- Serve hot over rice or with crusty bread.
