Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into thin strips
  • 1.5 cups long-grain white rice
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 tbsp curry powder
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

How to cook it

  1. Cook the rice according to the package instructions and keep it warm.
  2. Heat the oil in a large skillet over medium-high heat and cook the chicken strips for 5 to 6 minutes, turning occasionally, until browned and cooked through, then set aside.
  3. Add the onion to the same skillet and cook until softened, about 4 minutes, then stir in the curry powder and flour and cook for 1 minute, until fragrant.
  4. Gradually whisk in the chicken broth, then the cream, and simmer for 4 to 5 minutes, until slightly thickened.
  5. Return the chicken to the skillet and simmer for 2 minutes more, then season with the salt and pepper.
  6. Spoon the chicken and sauce over the warm rice and serve, a home curry that is really just curry powder simmered into a cream sauce and tastes nothing like an actual South or Southeast Asian curry.
