Ingredients

  • 2 tbsp vegetable oil
  • 1 lb beef chuck, cut into thin strips
  • 1 large onion, chopped
  • 3 tbsp tomato paste
  • 1 tsp sweet paprika
  • 6 oz smoked ham, diced
  • 6 oz smoked pork sausage, sliced
  • 3 dill pickles, diced
  • 1/4 cup pickle brine
  • 6 cups beef broth
  • 2 bay leaves
  • 1 lemon, sliced
  • 1/2 cup sour cream, for serving
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Heat the oil in a large pot and brown the beef strips over medium-high heat, about 5 minutes, then set them aside.
  2. Add the onion to the pot and cook until softened, about 5 minutes, then stir in the tomato paste and paprika and cook for 1 minute.
  3. Return the beef to the pot along with the ham, sausage, pickles, pickle brine, bay leaves, and beef broth, and bring to a simmer.
  4. Cover and simmer over low heat for 30 minutes, until the beef is tender, then season with the salt and pepper.
  5. Ladle the soljanka into deep bowls, top each portion with a lemon slice and a spoonful of sour cream, and serve hot.
