Ingredients

  • 1.5 lb boneless, skinless chicken thighs, thinly sliced
  • 1 tbsp sweet paprika
  • 1 tsp ground cumin
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1.5 cups long-grain white rice
  • 1/2 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 2 tbsp fresh parsley or dill, chopped

How to cook it

  1. Combine the chicken with the paprika, cumin, garlic, oregano, oil, salt, and pepper in a bowl and let marinate for at least 15 minutes.
  2. Meanwhile, cook the rice according to the package instructions and keep it warm.
  3. Heat a large skillet over high heat and sear the marinated chicken for 6 to 8 minutes, turning occasionally, until browned and cooked through, then slice it into thin strips the way a doner spit is shaved.
  4. Stir together the yogurt, lemon juice, a pinch of salt, and the parsley or dill in a small bowl to make the sauce.
  5. Divide the rice among bowls, top with the sliced chicken, and scatter the cucumber, tomato, and red onion over the top.
  6. Drizzle the yogurt sauce generously over each bowl and serve warm, the everyday chicken-and-rice bowl that reflects how thoroughly Turkish-German cooking has become ordinary German weeknight food.
