- 2 lb potatoes, boiled, cooled and sliced
- 1 onion, sliced
- 2 tbsp butter
- 2 tbsp vegetable oil
- 1/2 tsp caraway seeds
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Heat the butter and oil in a large skillet over medium-high heat and add the sliced potatoes in a single layer, working in batches if needed.
- Fry for 8 to 10 minutes without stirring too often, until deeply golden and crisp on the underside.
- Flip the potatoes, add the onion and caraway seeds, and cook for 8 minutes more, until the onion softens and the second side is golden.
- Season with the salt and pepper.
- Scatter the parsley over the top while everything is still hot. On its own this dish is the base for countless quick German dinners, often topped simply with a fried egg or a sliced sausage.
