Veggie Sushi Bowl

Ingredients
- 2 cups sushi rice
- 3 tbsp rice vinegar
- 1 tbsp sugar
- 2 avocados
- 1 cucumber
- 1 cup shelled edamame
- 2 carrots
- 2 nori sheets
- 2 tbsp sesame seeds
- 3 tbsp tamari
- 1/4 cup pickled ginger
How to cook it
- Rinse and cook the sushi rice, then fold in the rice vinegar and sugar and let cool slightly.
- Steam or boil the edamame until tender, about 4 minutes.
- Divide the rice among four bowls.
- Arrange the avocado, cucumber, edamame, and carrots over the rice.
- Top with nori strips, sesame seeds, and pickled ginger, and drizzle with tamari.
