Vegetable Pulao

Ingredients
- 2 cups basmati rice
- 3 cups mixed vegetables (carrot, beans, peas, potato)
- 1 onion
- 1 tbsp ginger-garlic paste
- 2 green chilies
- 1 tbsp whole spices (bay leaf, cardamom, cloves, cinnamon, cumin)
- 1/4 cup cashews
- 3 tbsp neutral oil
- 3.5 cups water
- 1/4 cup chopped cilantro
- 1 tsp salt
How to cook it
- Rinse the basmati rice and soak it for 20 minutes, then drain.
- Heat the oil in a pot and let the whole spices sizzle, then fry the cashews and onion until golden.
- Add the ginger-garlic paste and green chilies, then stir in the mixed vegetables and cook for 4 minutes.
- Add the drained rice, water, and salt and bring to a boil, then cover and cook on low until the water is absorbed, about 15 minutes.
- Rest for 5 minutes, fluff with a fork, fold in cilantro, and serve.
