Chicken Korma

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 1/2 cup raw cashews
- 1/2 cup plain yogurt
- 1/2 cup heavy cream
- 2 onions
- 4 garlic cloves
- 1 tbsp grated ginger
- 2 tsp garam masala
- 1 tsp ground coriander
- 4 green cardamom pods
- 3 tbsp neutral oil
- 4 cups cooked basmati rice
- 1 tsp salt
How to cook it
- Soak the cashews in hot water for 10 minutes, then blend them smooth with the yogurt.
- Heat the oil in a heavy pot and cook the sliced onions until soft and golden, about 10 minutes.
- Add the garlic, ginger, cardamom, coriander, and half the garam masala and cook until fragrant, about 1 minute.
- Stir in the chicken pieces and salt and sear for 4 minutes.
- Lower the heat, stir in the cashew yogurt, and simmer gently until the chicken is tender, about 18 minutes, stirring so it does not catch.
- Finish with the cream and remaining garam masala, warm through, and serve over the basmati rice.
