Home-Style Butter Chicken

Ingredients
- 1.5 lb boneless chicken thighs
- 1/2 cup plain yogurt
- 28 oz crushed tomatoes
- 4 tbsp butter
- 1/3 cup raw cashews
- 1/2 cup heavy cream
- 1 onion
- 6 garlic cloves
- 1 tbsp grated ginger
- 2 tsp garam masala
- 1 tsp red chili powder
- 1 tsp ground cumin
- 1 tsp dried fenugreek leaves
- 1 tsp salt
How to cook it
- Toss the chicken with the yogurt, half the garam masala, and half the salt and let it marinate 20 minutes.
- Soak the cashews in hot water for 10 minutes, then blend them smooth with a splash of the water.
- Melt 2 tbsp butter in a pot and brown the marinated chicken in batches, then set it aside.
- In the same pot cook the onion, garlic, and ginger until soft, then stir in the cumin, chili powder, and crushed tomatoes and simmer 12 minutes.
- Blend the sauce smooth, return it to the pot with the cashew paste, remaining butter, and cream, and simmer gently for 5 minutes.
- Return the chicken to finish cooking, about 8 minutes, then crush in the fenugreek leaves and remaining garam masala and serve hot with roti or rice.
