Tandoori-Style Chicken

Ingredients
- 3 lb bone-in chicken drumsticks and thighs
- 1 cup plain yogurt
- 5 garlic cloves
- 1.5 tbsp grated ginger
- 3 tbsp lemon juice
- 1 tbsp paprika
- 2 tsp garam masala
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne
- 2 tbsp neutral oil
- 1.5 tsp salt
How to cook it
- Slash each piece of chicken a few times down to the bone so the marinade can penetrate.
- Whisk the yogurt, garlic, ginger, lemon juice, oil, all the spices, and salt into a thick marinade.
- Coat the chicken thoroughly and let it marinate at least 20 minutes, or up to overnight in the fridge.
- Heat the oven to 425F and arrange the chicken on a rack set over a foil-lined sheet pan.
- Roast until deeply colored and cooked to 175F at the bone, about 35 minutes, turning once.
- Finish under the broiler for 3 minutes for charred edges and serve hot.
