Curd Rice (Yogurt Rice)

Ingredients
- 4 cups cooked rice
- 2 cups plain yogurt
- 1/2 cup milk
- 2 green chilies
- 1 tbsp grated ginger
- 10 curry leaves
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2 dried red chilies
- 2 tbsp neutral oil
- 1/4 cup chopped cilantro
- 3/4 tsp salt
How to cook it
- Mash the warm cooked rice lightly so it turns soft, then let it cool to room temperature.
- Stir in the yogurt, milk, and salt until the rice is creamy, adding a little more milk if it is stiff.
- Heat the oil in a small pan and let the mustard seeds pop, then fry the urad dal, curry leaves, dried red chilies, green chilies, and ginger until fragrant.
- Pour this tempering over the curd rice and fold it through.
- Garnish with cilantro and serve at room temperature or chilled.
