Smothered Pork Chops

Smothered Pork Chops is Southern home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

45 min Medium

Ingredients

  • 4 bone-in pork chops
  • 1/2 cup all-purpose flour
  • 2 onions
  • 4 garlic cloves
  • 2 cups chicken broth
  • 1/2 cup whole milk
  • 2 tbsp butter
  • 2 tbsp neutral oil
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Season the pork chops with salt, pepper, and paprika, then dredge lightly in the flour, reserving the extra.
  2. Heat the oil in a skillet over medium-high and sear the chops until browned, about 3 minutes per side, then remove.
  3. Melt the butter in the same pan and cook the sliced onions and garlic until deep golden, about 8 minutes.
  4. Sprinkle in 2 tbsp of the reserved flour and cook 1 minute, then whisk in the broth and milk and simmer until thickened.
  5. Return the chops, cover, and simmer until tender and cooked through, about 15 minutes.
  6. Spoon the onion gravy over the chops and serve.

A Southern dinner is a plate rather than a single dish. These are the courses that normally sit beside Smothered Pork Chops, read from the same composition Dinejot builds a real meal from.

When to cook it

Smothered Pork Chops takes about 45 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
