Ingredients

  • 1 lb rotini pasta
  • 2 cups fresh basil
  • 1/3 cup pine nuts
  • 1/2 cup grated parmesan
  • 2 garlic cloves
  • 1/2 cup olive oil
  • 2 cups cherry tomatoes
  • 8 oz fresh mozzarella pearls
  • 1/2 tsp salt

How to cook it

  1. Cook the rotini in salted boiling water until al dente, about 9 minutes, then drain and cool under cold water.
  2. Blend the basil, pine nuts, parmesan, garlic, and olive oil into a smooth pesto and season with salt.
  3. Toss the cooled pasta with the pesto.
  4. Fold in the cherry tomatoes and mozzarella pearls and serve chilled or at room temperature.
