Pecan-Crusted Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1.5 cups chopped pecans
  • 3/4 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 3 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Heat the oven to 400F and line a sheet pan.
  2. Pulse the pecans with the panko until coarsely ground, then spread on a plate.
  3. Set up the flour seasoned with salt and pepper in one dish and the eggs beaten with the Dijon and honey in another.
  4. Dredge each chicken breast in the flour, dip in the egg mixture, and press firmly into the pecan mixture to coat.
  5. Melt the butter on the sheet pan in the oven, then lay the chicken on top and drizzle with any extra butter.
  6. Bake until the crust is golden and the chicken registers 165F, about 22 minutes, turning once.
  7. Rest 5 minutes and serve.
