Santula (Odia Light Sauteed Mixed Vegetables)

Ingredients
- 1 potato, cubed
- 1/2 cup eggplant, cubed
- 1/2 cup pumpkin, cubed
- 1 raw banana (plantain), cubed
- 2 green chilies, slit
- 1 tbsp mustard oil
- 1/2 tsp panch phoron (five-spice blend)
- 1/2 tsp turmeric
- 1 cup water
- 1 tsp salt
How to cook it
- Heat the mustard oil in a pot, keeping it light since santula is meant to use minimal oil, and temper with the panch phoron.
- Add the potato, pumpkin, and raw banana, and saute for 3 minutes.
- Add the eggplant, turmeric, salt, and slit green chilies, and pour in the water.
- Simmer uncovered on low heat until the vegetables are just tender and the liquid reduces to a light gravy, about 15 minutes.
- Serve warm, the gentler, less-bitter everyday cousin of shukto that Odia households make often.
