- Meanwhile, heat the olive oil in a saucepan over medium heat and cook the onion until softened, about 5 minutes.
- Add the garlic and cook for 1 minute, then stir in the crushed tomatoes, tomato paste, oregano, sugar, salt, and pepper.
- Simmer uncovered for 12 to 15 minutes, stirring occasionally, until thickened, loosening with a splash of the reserved pasta water if it looks too thick.
- Toss the drained pasta through the sauce until well coated.
- Scatter the basil over the top and serve right away, plain and simple the way most German families actually cook this on a weeknight, often with a jarred sauce instead of one made from scratch.
