  • 1.5 lb ground beef
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1.5 tbsp mild chili powder
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 14 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 30 oz canned kidney beans, drained
  • 1 cup beef broth
  • 1.5 tsp salt

How to cook it

  1. Heat the oil in a large pot over medium heat and cook the onion, garlic, and bell pepper until softened, about 5 minutes.
  2. Add the ground beef, breaking it up with a spoon, and cook until browned, about 8 minutes.
  3. Stir in the chili powder, cumin, and paprika and cook for 1 minute, until fragrant.
  4. Add the crushed tomatoes, tomato paste, kidney beans, and beef broth, bring to a simmer, and cook uncovered for 20 to 25 minutes, stirring occasionally, until thickened.
  5. Season with the salt and pepper.
  6. Ladle into bowls and serve hot, an easy one-pot German families make plainer and milder than the Tex-Mex original, especially with kids at the table.
