Gulasch (Beef and Potato Paprika Stew)

Ingredients
- 2 lb beef chuck, cut into 1-inch cubes
- 3 large onions, chopped
- 3 garlic cloves, minced
- 3 tbsp sweet paprika
- 1/2 tsp caraway seeds
- 2 tbsp tomato paste
- 3 cups beef broth
- 2 bay leaves
- 1.5 lb potatoes, peeled and cut into chunks
- 3 tbsp vegetable oil
- 1.5 tsp salt
- 1/2 tsp black pepper
How to cook it
- Heat the oil in a large heavy pot and brown the beef in batches over medium-high heat, about 8 minutes total, then set it aside.
- Add the onions to the pot and cook over medium heat until deeply softened and golden, about 10 minutes, then add the garlic and cook for 1 minute more.
- Stir in the paprika, caraway seeds, and tomato paste and cook for 1 minute, then return the beef to the pot.
- Pour in the beef broth, add the bay leaves, bring to a simmer, cover, and cook over low heat for 45 minutes, stirring occasionally.
- Add the potatoes and simmer uncovered for 20 to 25 minutes more, until the beef and potatoes are both fork-tender.
- Season with the salt and pepper, remove the bay leaves, and ladle into deep bowls; this one-pot needs nothing else at the table.
