  • 2 cups all-purpose flour
  • 2 tbsp olive oil
  • 3/4 cup warm water
  • 1/2 tsp salt
  • 1 cup creme fraiche or sour cream
  • 2 large onions, thinly sliced
  • 1 pinch ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh chives, chopped

How to cook it

  1. Preheat the oven to 475 F and combine the flour, olive oil, warm water, and salt in a bowl; knead briefly into a smooth dough, about 3 minutes, then let it rest for 10 minutes.
  2. Roll the dough out on a floured surface into a very thin large rectangle and transfer it to a baking sheet lined with parchment.
  3. Spread the creme fraiche evenly over the dough all the way to the edges, then season with the nutmeg, salt, and pepper.
  4. Scatter the sliced onions evenly over the top.
  5. Bake for 12 to 15 minutes, until the edges are crisp and browned and the onions are lightly caramelized.
  6. Scatter the chives over the top, slice into rectangles, and serve hot, the meatless version of Flammkuchen that has become genuine everyday vegetarian home food, not the classic version topped with Speck.
