Loaded Beef Nachos
Loaded Beef Nachos is Tex Mex home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 12 oz tortilla chips
- 1 lb ground beef
- 1 tbsp chili powder
- 1 tsp ground cumin
- 15 oz canned black beans
- 2 cups shredded cheddar
- 1/2 cup pickled jalapenos
- 2 tomatoes
- 4 green onions
- 1/2 cup sour cream
- 1 cup guacamole
- 1 tbsp olive oil
- 1 tsp salt
How to cook it
- Heat the oven to 400F and brown the ground beef in the olive oil with the chili powder, cumin, and salt.
- Stir the drained black beans into the beef to warm through.
- Spread the tortilla chips on a large sheet pan in an even layer.
- Scatter the beef and beans over the chips and cover with the shredded cheddar.
- Bake until the cheese is fully melted and bubbling, about 8 minutes.
- Top with diced tomatoes, pickled jalapenos, and green onions, then finish with dollops of sour cream and guacamole.

Loaded Beef Nachos takes about 30 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
