Hackbraten (German Meatloaf)

Ingredients
- 2 lb mixed ground pork and beef
- 1 stale bread roll
- 1/4 cup water
- 1 onion, finely chopped
- 2 eggs
- 1 tbsp Dijon mustard
- 2 tbsp fresh parsley, chopped
- 1 tsp dried marjoram
- 1.5 tsp salt
- 1/2 tsp black pepper
- 3 tbsp tomato paste
How to cook it
- Preheat the oven to 375 F and soak the bread roll in the water until soft, then squeeze out the excess liquid.
- In a large bowl, combine the ground pork and beef, softened bread, onion, eggs, mustard, parsley, marjoram, salt, and pepper, and mix until just combined without overworking it.
- Shape the mixture into a firm loaf and place it in a greased baking dish or loaf pan.
- Spread the tomato paste over the top of the loaf.
- Bake for 40 to 45 minutes, until cooked through and the top is nicely browned, then let it rest for 10 minutes before slicing.
- Serve warm, or slice it cold the next day for sandwiches; this batch-cooks and reheats well.
