Hackbraten (German Meatloaf)

Ingredients

  • 2 lb mixed ground pork and beef
  • 1 stale bread roll
  • 1/4 cup water
  • 1 onion, finely chopped
  • 2 eggs
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried marjoram
  • 1.5 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp tomato paste

How to cook it

  1. Preheat the oven to 375 F and soak the bread roll in the water until soft, then squeeze out the excess liquid.
  2. In a large bowl, combine the ground pork and beef, softened bread, onion, eggs, mustard, parsley, marjoram, salt, and pepper, and mix until just combined without overworking it.
  3. Shape the mixture into a firm loaf and place it in a greased baking dish or loaf pan.
  4. Spread the tomato paste over the top of the loaf.
  5. Bake for 40 to 45 minutes, until cooked through and the top is nicely browned, then let it rest for 10 minutes before slicing.
  6. Serve warm, or slice it cold the next day for sandwiches; this batch-cooks and reheats well.
