Tex Mex
Chili con Carne
Chili con Carne is Tex Mex home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 lb ground beef
- 30 oz canned kidney beans
- 28 oz crushed tomatoes
- 1 onion
- 1 bell pepper
- 4 garlic cloves
- 3 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 2 cups beef broth
- 2 tbsp neutral oil
- 1 cup shredded cheddar
- 1/2 cup sour cream
- 1 tsp salt
How to cook it
- Heat the oil in a pot and brown the ground beef, breaking it up, about 6 minutes, then drain excess fat.
- Add the onion, bell pepper, and garlic and cook until softened, 5 minutes.
- Stir in the chili powder, cumin, and paprika and cook 1 minute.
- Add the crushed tomatoes, beans, and broth and simmer, partly covered, for 45 minutes, then season with salt.
- Serve topped with cheddar and sour cream.

When to cook it
Chili con Carne takes about 75 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. It is at its best in the fall and winter, which is when what goes into it is worth buying.
