Ingredients
- 2 lb potatoes, peeled and cut into chunks
- 2 tbsp butter
- 1 large onion, chopped
- 1 lb corned beef, cooked and finely chopped
- 1 cup pickled beetroot, diced
- 1/3 cup dill pickles, chopped
- 4 eggs
- 4 rollmops (pickled herring fillets)
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Boil the potatoes in salted water for 18 to 20 minutes, until very tender, then drain.
- Melt the butter in a large skillet, cook the onion until soft, about 5 minutes, then add the chopped corned beef and cook for 5 minutes more, until heated through and lightly browned.
- Mash the boiled potatoes together with the corned beef and onion mixture until mostly smooth but still a little chunky, then fold in half the diced beetroot and the chopped pickles.
- Season with the salt and pepper, then keep the hash warm over low heat.
- Fry the eggs sunny-side up in a separate pan.
- Divide the hash among plates, top each portion with a fried egg and the remaining beetroot, and serve with a rollmops alongside.
