- 2 tbsp pickle brine
- 2 tbsp fresh chives, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Put the potatoes in a pot of salted water, bring to a boil, and cook for 20 to 25 minutes, until fork-tender, then drain and let cool.
- Peel the cooled potatoes and cut them into cubes.
- Whisk together the mayonnaise, mustard, and pickle brine in a large bowl.
- Fold in the potatoes, chopped eggs, diced pickles, and red onion, mixing gently so the potatoes stay mostly intact.
- Season with the salt and pepper, cover, and chill for at least 1 hour.
- Scatter the chives over the top and serve cold; the mayonnaise and egg make this the true opposite of the warm, broth-dressed southern version, and it is common enough nationwide to be the default potato salad outside Bavaria.
