Vegetable Lasagna

Ingredients
- 1 lb lasagna noodles
- 15 oz ricotta
- 3 cups shredded mozzarella
- 1 cup grated parmesan
- 1 large egg
- 2 zucchini
- 4 cups baby spinach
- 8 oz cremini mushrooms
- 1 bell pepper
- 28 oz crushed tomatoes
- 1 onion
- 4 garlic cloves
- 3 tbsp olive oil
- 1/4 cup chopped basil
- 1 tsp salt
How to cook it
- Heat the oven to 375F and bring a pot of salted water to a boil.
- Warm the olive oil in a skillet and cook the onion, garlic, mushrooms, zucchini, and bell pepper until tender, about 10 minutes, then stir in the spinach until wilted.
- In a separate pot, simmer the crushed tomatoes with a pinch of salt and half the basil for 10 minutes.
- Cook the noodles until just pliable, about 8 minutes, then drain.
- Mix the ricotta with the egg, half the parmesan, and the remaining basil.
- Layer sauce, noodles, ricotta, sauteed vegetables, and mozzarella in a baking dish, repeating for three layers and finishing with sauce and cheese.
- Cover with foil and bake 25 minutes, then uncover and bake until golden and bubbling, about 20 minutes more.
- Let rest 15 minutes before slicing.
