Vegetable Dum Biryani

Ingredients
- 2 cups basmati rice
- 4 cups mixed vegetables (carrot, beans, cauliflower, peas)
- 2 onion
- 3/4 cup plain yogurt
- 2 tbsp ginger-garlic paste
- 3 green chilies
- 2 tbsp biryani masala
- 1/2 tsp turmeric
- 1/4 cup cashews
- 1/2 cup mint leaves
- 1/2 cup chopped cilantro
- 4 tbsp neutral oil
- 1 tbsp whole spices (bay leaf, cardamom, cloves, cinnamon)
- 3 cups water
- 1.5 tsp salt
How to cook it
- Soak the basmati rice for 20 minutes, then boil it with the whole spices and salt until it is 70 percent cooked and drain it.
- Fry the sliced onions in the oil until deep golden and crisp, then set half aside for layering.
- To the remaining onions add the ginger-garlic paste, green chilies, yogurt, biryani masala, and turmeric, then stir in the vegetables and cashews and cook for 8 minutes.
- Layer the par-cooked rice over the vegetables, scatter the reserved fried onions, mint, and cilantro on top, and drizzle over a little water.
- Cover tightly and cook on the lowest heat for 20 minutes, then rest 5 minutes before gently fluffing and serving.
