Vegetable Dum Biryani

Vegetable Dum Biryani is North Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

Ingredients

  • 2 cups basmati rice
  • 4 cups mixed vegetables (carrot, beans, cauliflower, peas)
  • 2 onion
  • 3/4 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 3 green chilies
  • 2 tbsp biryani masala
  • 1/2 tsp turmeric
  • 1/4 cup cashews
  • 1/2 cup mint leaves
  • 1/2 cup chopped cilantro
  • 4 tbsp neutral oil
  • 1 tbsp whole spices (bay leaf, cardamom, cloves, cinnamon)
  • 3 cups water
  • 1.5 tsp salt

How to cook it

  1. Soak the basmati rice for 20 minutes, then boil it with the whole spices and salt until it is 70 percent cooked and drain it.
  2. Fry the sliced onions in the oil until deep golden and crisp, then set half aside for layering.
  3. To the remaining onions add the ginger-garlic paste, green chilies, yogurt, biryani masala, and turmeric, then stir in the vegetables and cashews and cook for 8 minutes.
  4. Layer the par-cooked rice over the vegetables, scatter the reserved fried onions, mint, and cilantro on top, and drizzle over a little water.
  5. Cover tightly and cook on the lowest heat for 20 minutes, then rest 5 minutes before gently fluffing and serving.

When to cook it

Vegetable Dum Biryani takes about 70 minutes from a cold stove to the table, and the cooking itself is a proper project. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish. It also turns up at Eid.
