Lamb Rogan Josh

Ingredients
- 2 lb boneless lamb shoulder
- 3/4 cup plain yogurt
- 2 onions
- 6 garlic cloves
- 1.5 tbsp grated ginger
- 1 cup tomato puree
- 2 tsp Kashmiri chili powder
- 1 tsp ground fennel
- 2 tsp garam masala
- 1 cinnamon stick
- 2 bay leaves
- 4 tbsp neutral oil
- 4 cups cooked basmati rice
- 1.5 tsp salt
How to cook it
- Pat the lamb cubes dry and brown them in the oil over medium-high heat in batches, then set them aside.
- Add the onions to the pot and cook until deeply golden, about 12 minutes, then stir in the garlic, ginger, cinnamon, and bay leaves.
- Add the Kashmiri chili, fennel, and half the garam masala and cook until fragrant, about 1 minute.
- Whisk in the yogurt a spoonful at a time so it does not split, then stir in the tomato puree.
- Return the lamb with its juices, add the salt and a cup of water, cover, and simmer gently until fork tender, about 1 hour.
- Stir in the remaining garam masala, adjust the salt, and serve over the basmati rice.
