Teriyaki Salmon

Ingredients
- 4 salmon fillets
- 1/3 cup soy sauce
- 3 tbsp mirin
- 2 tbsp brown sugar
- 1 tbsp grated ginger
- 2 garlic cloves
- 1 tbsp sesame seeds
- 3 scallions
- 2 cups cooked rice
- 1 tbsp neutral oil
How to cook it
- Simmer the soy sauce, mirin, brown sugar, ginger, and garlic in a small pan until slightly syrupy, about 4 minutes.
- Pat the salmon dry and sear skin-side down in the neutral oil over medium-high heat, about 4 minutes.
- Flip the fillets, brush with the teriyaki glaze, and cook until just opaque, about 3 minutes more.
- Spoon the remaining glaze over the salmon and sprinkle with sesame seeds and scallions.
- Serve over rice.
