Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 1/3 cup soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 1 tbsp cornstarch
  • 4 cups cooked white rice
  • 3 cups broccoli florets
  • 2 carrots
  • 1 tbsp toasted sesame seeds
  • 4 scallions
  • 2 tbsp neutral oil

How to cook it

  1. Stir the soy sauce, brown sugar, rice vinegar, garlic, ginger, and cornstarch with 1/4 cup water to make the teriyaki sauce.
  2. Heat 1 tbsp oil in a large skillet over medium-high and cook the bite-sized chicken until browned and cooked through, about 8 minutes.
  3. Pour in the sauce and simmer until thick and glossy and coating the chicken, about 3 minutes.
  4. Meanwhile steam the broccoli and carrots until crisp-tender, about 5 minutes.
  5. Divide the rice among bowls and top with the chicken, vegetables, and any extra sauce.
  6. Finish with sesame seeds and sliced scallions.
